Lunch idea for a thai craving day.
More often than not, I find myself sick of the same old healthy chicken lunch. I usually try to alternate between chicken/turkey or vegetarian meats like seitan, tofu or tempeh but since we usually try to go the healthy way on weekdays, the same old sautéed meats can get BORING.
Depending on our days’ preference I try to mix up the cold big sized salads with warmer veggie bowls but man, how many ways can you prepare chicken without it getting old? My husband is definitely a Wok lover, and every single time he smells something with soy sauce on it he is up for it. I had to find a way to make us a wok inspired lunch, leaning towards the healthier side.
The basic idea of this meal is changing up the same old sauce and giving it that wok look, then decorate it with a bit of coriander seeds, nutmeg, cloves, cinnamon, and some linseeds to top it of. Not only does the dish compeletely change, but its still healthy, delicious, and fills you up a lot more because of the fats in all those seeds. Another great tip is to with up the usual white rice they use and mix everything with quinoa instead. I like adding a but of almonds in there to make it seem a bit more legit, but you get the idea – get creative and mix everything up!
Instructions:

Mix 3 cloves of garlic, 1 tablespoon of soy sauce, 2 tablespoons of lemon juice and 1 tablespoon of coarsely ground black pepper in a cup. Marinade the chicken and allow it to set in fridge for 10 minutes.

Place chicken on medium high heat and cook until well done. Use leftover marinade to baste chicken when you turn it the first time.

Add chicken to the quinoa bowl and mix it in with the goodies you chose, I recommend almonds, broccoli, carrots, pepper, and pieces of cheese.

Decorate with the ingredients mentioned above (coriander seeds, nutmeg, cloves, cinnamon, and some linseeds)
Instead of having lunch at your local thai next time, try these spices on something you would usually cook with some simple salt and pepper and let me know how it goes 🙂 Not only is it extremely quick and easy to make, but you have a great balance of proteins, good fats, and great sources of carbs from the veggies and quinoa.
