Protein “can’t believe it’s not sugar” cookies

I also call them.. cookie lifesavers!

This cookie idea was born after a lot of frustration. How is it that after spending the morning doing exercise, taking care of my diet and carefully ignoring the cookie aisle, the minute I smell fresh-baked cookies at a friend’s house, or feel like cooking it has to sabotage my whole day of effort?

Whenever it’s that kind of week where you need to watch what your eating.. either because a special event is coming up or you ate a bit too much the past days, let’s face it, going through afternoons can be a real challenge. Why is it that a few hours past lunch something inside us girls goes wild and begs us for any type of sugar?? My sisters and I really struggle with that.

Let’s be honest, a girl can’t live forever ignoring chocolate chip cookies.

And what happens when there is a movie night with friends or just a boring afternoon that just screams “cookies”?! I personally hate restricting myself when I want to eat something really bad so that’s when I decided to get creative.

I would look online and search for healthy cookies but all that appeared still contained sugar, flour, and even butter. That’s when I just decided to find my own recipe through trial and error.

This recipe is for those kinds of days when you’re about to give in to the sweet tooth but decide to trick your body into these “can’t believe it’s not sugar”- chocolate chip cookies.

How? I made 2 different sets as you can see on the picture and the best part of it is that you actually only need 3 ingredients! NO sugar at all.

BATCH 1:

1 scoop of caramel protein powder (for some reason my husband and I still don’t understand, the carnivore brand makes the final result extra “soft baked”. (It’s my favorite.)
1/2 cup oat flour (Remember, if you don’t have oat flour just put the normal oats in the processor and it will become flour)
4 squares of dark chocolate cut into your size of preference.
Water or almond milk

Instructions:

1. Preheat the oven to 350 degrees.
2. Mix the protein powder and the oat flour in a bowl.
3. Add the chocolate squares according to your own taste.
4. Start adding the water/milk in small tablespoons. Mix it up and be careful to not add TOO much water/milk. I usually only need about 3 tablespoons to get the average “cookie dough” texture.

Bake for 10 minutes in the oven at 350 degrees

BATCH 2:

1 scoop of vanilla protein
1 large banana (the riper the better)
1/2 cup oat or almond flour

Instructions:

1. Preheat the oven to 350 degrees.
2. Mix the protein powder and the oat flour in a bowl.
3. Add the banana and chocolate squares (optional)
4. Start adding the water/milk in small tablespoons. Mix it up and be careful to not add TOO much water/milk. I usually only need about 3 tablespoons to get the average “cookie dough” texture.

I’m 26, born and raised in Costa Rica. When I was 19, I met the love of my life and we decided 2 weeks later that we wanted to get married. I finished college  and we decided to leave our country and move to Spain in order to start our new family life
