Low Carb Crunchy Chicken Nuggets

Does anyone else have that recipe that they obsess over and can’t stop repeating every time a craving sets in? Well this is mine – healthy version chicken nuggets!

Who doesn’t love chicken fingers? I feel like they are the ultimate “cheat meal” food but when i found this healthy chicken nuggets healthy version, and tasted how delicious it was without the guilt afterwards, it’s now literally the first thing that pops in my head on a lazy saturday afternoon.

Also, if you are a mom, you’re probably used to the kids always ordering the same item from the kids menu… “chicken nuggets”!! If you want to surprise them with a homemade meal that tastes just as good as their favorite Chilli’s plate, you are going to love this. Not only is it super crispy but it’s easy to make, only includes healthy ingredients and can work as an afternoon snack, lunch or dinner.

Healthy chicken nuggets

I’ve done several tries of online recipes that called for breadcrumbs, oatmeal flour, and even almond flour to reduce the carbs but ive found that noting works better than a 70/30 mix of oatmeal and oat/almond flour respectively. Of course, the more olive oil you use on the pan the crisper they will end but you can decide that depending on your own taste.

The first step is going to be cutting your chicken/turkey breast into the size and amount of chicken nuggets that you want, so although this is where you can get creative, I like cutting mine into long thin strips just because it makes them easier to fit into the pan and it gives the feeling that there are so much more strips than if I just cut a few big ones but again, it’s totally your choice!

PS. I’m not a fan of chicken, so i make it with turkey breast but im pretty sure it is just as awesome either way.

How to make it?
1, Cut the desired amount of turkey breast into strips. Make sure they are dry and not soggy! Leave aside

2. Make a mixture of:
-1tsp ginger
-1tsp garlic
-2tsb soy sauce
-1 egg
-2tsp oat flour
-1tsp oregano
-2tsb parmesan cheese
-1tsp salt
Mix this all up in a bowl and add the chicken strips. Cover and let it sit for 15 minutes.

3. Mix together 70% oat flakes and 30% oat or almond flour (depending on the amount of strips you can calculate how much you’ll need)

4. Dip the turkey into the oat mix, and set in the pan on mid-high heat. **You can make all of the strips, or freeze a few for another day once they are coated in the oat mix**

5. Add olive oil to the pan and add the chicken strips until they turn golden brown.

6. Add some extra parmesan and serve with your favorite dipping sauce!
