Sooo happy with these july hot summer days!!! Whats better than a morning at the beach, running along the coast for a quick workout, and then coming home to a fresh cold salad? Ive never understood why people stereotype salads as boring meals…..
They are awesome! I feel like the leaves make it seem like you are having a huge plate that you even struggle finishing up but it has so few calories that it almost doesn’t count. (if you do it the right way being careful with the ingredients and dressing of course!!)
This has been one of my go-to recipes these days, and I cant get enough of it. I feel like a crazy person because once I find something I really enjoy and is good for my health, I just keep on repeating without trying anything new 😂 I feel like that is a bit obsessive but it works for me and I really enjoy it until the love runs out. And then I cant even look at it because of how much I ate of it and I have to search for a new obsession…!! haha.
So in this salad, there’s quite a bit of goodies. I usually try to avoid dairy because of a hormone issue but lets face it- cheese is awesome. Plus, it gives the salad so much flavor that i just had to. I mix the cheese with some avocado for the good fats, add some spinach, figs, and veggies for the carbs and since I haven’t been up to much meat lately, I usually take it with a protein smoothie (with strawberries and almond milk of course!!)
Not only is it super easy to make, but the flavors are great (the figs and blue cheese go together amazing) AND it will keep you satisfied for hours even though it’s a salad!
Ingredients:
4 large oak tree leaves and spinach
4 large cut tomatoes
1 large avocado
1 fig cut into pieces
100g of mushrooms
100g of baked broccoli
50 grams of blue cheese
Dressing:
– Half cup red wine vinegar
– Half cup plain Greek yogurt
– 1 Tablespoon Dijon mustard
– 2 cloves garlic minced
– 1 teaspoon oregano
– 1 teaspoon salt
My husband and i shared this huge bowl but since he’s double my size I usually end up eating 1/3 of this portion. On the side for him, I usually prepare salmon or a fresh cut of tuna because the protein shake doesn’t fill him up 😅. I personally dont eat fish but the strawberry protein shake does the trick for me… at least for a few hours…. yes, I eat a LOT! haha. Enjoy!
