Is it just me or can eating salad get REALLY boring? Sadly, im just not that kind of girl that enjoys the taste of lettuce and tomato. I need my dressing.
If you love the way Japanese restaurants taste, it’s probably because you like the dressing they traditionally use, called Carrot-Ginger Dressing. Not only is it super light and refreshing, but it’s pretty healthy too! When we want a healthy lunch at home, i’ve been trying out all different type of salad ingredients, but unless it involves cheese (which in my opinion – isn’t the healthiest option) i just can’t find the excitement in eating it.
Apart from that, after checking every single salad dressing in the supermarket, i couldn’t even find one product without sugar, so that left no other choice than to look for online salad dressing recipes. After doing the usual; making a mix of several favorites, i managed to make this delicious lemon/carrot dressing that has saved lunch time this whole week!!!
Also, if you are looking for something fun to get the kids to eat their veggies, this can work as a dip as well! In my opinion, this works best if you make a larger amount than you actually need so that you can store it in the fridge for another day. If stored correctly, it can last up to a week in the fridge so you don’t have to make it every single time you cook, and can with it up with other dressings of your choice. Try it not only the traditional way on salads but as a chicken dressing or even to snack with some chips!
This dressing recipe only takes a few minutes to make, but it is important that you do have a food processor to achieve the right consistency. Also, if you are trying to get the original Asian flavor, try adding 2 tablespoons of miso (I prefer white because the flavor is not too strong).
Ingredients:
500 grams of peeled carrots
1/4 of a small onion
2 tablespoons of fresh ginger
1 clove of garlic
1 tablespoon sesame oil
2 tablespoons of low sodium soy sauce
1/4 cup olive oil or cocunut oil
2 teaspoons lemon juice
1/2 cup grape seed oil
1/2 teaspoon salt
1. First, gather all the ingredient.
2. Add every ingredient into the food processor, and pulse until carrot, onion and ginger are minced and smooth.
3. If you like texture in your dressings, add a few pieces of carrot at the end!
4. If you don’t like your dressing tasting too strong, you may add a bit of water to make it lighter.
